National Chocolate Cupcake Day is observed annually on October 18. With a dollop of frosting, one sweet serving will satisfy chocolate and dessert lovers!
Cupcakes have also been known to be called:
Fairy Cakes, Patty Cakes and Cup Cakes (different from Cupcakes (one-word)
Cupcakes can be traced back to 1796 when there was a recipe notation of “a cake to be baked in small cups” written in American Cookery, by Amelia Simmons. The earliest known documentation of the term cupcake was in 1828 in Seventy-five Receipts for Pastry, Cakes, and Sweetmeats in Eliza Leslie’s Receipts cookbook.
Cupcakes were originally baked in heavy pottery cups. Today, some bakers still use individual ramekins, small coffee mugs, large teacups, or other small ovenproof pottery-type dishes for baking their cupcakes.

There are many different types of dumplings that are oh, so delicious…savory dumplings, sweet dumplings – the list goes on and on. Crescent Roll Apple Dumplings are very likely the easiest you’ll come across, and with ingredients you’ve likely already got on hand, this dish is out of this world.
The secret element that adds a sweetness like no other is the 7-Up added just before baking that makes the dumplings sticky and caramelized. These dumplings have a pie taste that will remind you of home with classic cinnamon and sugar.
Ingredients:
2 (8 each) cans refrigerated crescent roll dough
2 sticks of butter
1 1/2 cups brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon or to taste
12 ounces 7 Up (or Mountain Dew)
2 large Granny Smith apples, peeled and cored
Directions:
Preheat oven to 350 degrees and butter a 9×13 baking dish.
Wash the apples, peel and cut into eight equal slices.
Unwrap the crescent roll and separate the triangles.
Place a piece of apple on each triangle of dough (on a wider side) and roll it in a croissant.
Place rolls inside buttered baking dish.
In a separate bowl, combine the butter, cinnamon, sugar and vanilla, mix until you get a liquid mixture without lumps and pour over the roll.
Pour soda between rolls (but not over) and bake for 35-45 minutes, or until they become golden brown.
Serve immediately with a scoop of vanilla ice cream.

Today is the day that pierogi lovers across the nation have been waiting for, it is National Pierogi Day. This holiday is celebrated each year on October 8.
- Pierogi is the plural form of the rarely used Polish word pierog.
- The word Pierogi can be found spelled a number of ways including perogi and pierogy.
However you choose to spell this delicious side dish, it is all the same. Pierogi are dumplings made up of unleavened dough that are first boiled then sometimes baked or fried in butter and optionally adding onion. Usually semicircular in shape, they are traditionally stuffed with a mashed potato filling, potato and cheese, potato and onion, cheese, cabbage, sauerkraut, ground meat, mushroom, spinach or fruit.
Pierogi are often served with melted butter, sour cream, fried bacon crumbles, sauteed mushrooms and onions and/or green onion. The dessert variety, those filled with a fruit filling, can be enjoyed topped with apple sauce, maple syrup, chocolate sauce and/or whipped cream.
There are other similar types of “dumpling like” dishes in other ethnic cuisines
It was the Eastern European immigrants that popularized pierogi in the United States. At first, pierogi were a family food among the immigrants and were also found in ethnic restaurants; Freshly cooked pierogi became a staple fundraisers by ethnic churches in the post-World War II era. By the 1960′s, pierogi could be found in the frozen food aisles of grocery stores in many parts of the United States.
While in other countries pierogi are eaten as a main dish, Americans typically consider them to be a side dish.
- At every Pittsburgh Pirates baseball game, there is a “pierogi race” where four runners, wearing pierogi costumes, race toward a finish line.
- Whiting, Indiana celebrates an annual Pieroti Fest each July.

Tasty BBQ Corn on the Cob Great for Grilling

Original recipe makes 6 servings
1 teaspoon chili powder
1/8 teaspoon dried oregano
1 pinch onion powder
Cayenne pepper to taste
Garlic powder to taste
Salt and pepper to taste
1/2 cup butter, softened
6 ears corn, husked and cleaned
Directions

Preheat grill for medium-high heat.

In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter. Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.

Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork. Turn corn occasionally during cooking.
